
This is an example of a Giant Salad. It has Greens, Tomato, Onion, Kimchi, with “Potato Salad Dressing”. Sample of Suggested Ingredients:
- 3 Cups of Vibrant Greens * see below for choice greens
- 4 cherry tomatoes- split
- 3 heaping Tbsp Beans ^^ see below
- Purple Cabbage shavings** see below
- Palm Full of broken Walnuts
- Small amount favorite Salad Dressing ++ see below
- See pictures below for other recommended additions
- Optional: ½ Tbsp ground Flaxseed @@
- Optional: 1 tsp of Nutritional Yeast
Note: The amounts indicated are just approximations. I throw Greens on a big plate until it’s covered! You may put any other vegetation on this salad you like- for example: Cucumbers, Capers, Radish, Broccoli, Cilantro, a hand full of home-gown sprouts, or some corn.
- *Vibrant Greens- You may mix and match Kale, Red Chard, Boc Choy, Beet Greens, Spinach, Radicchio, Arugula, Turnip, Mustard and/or Collard Greens to your hearts content! Do not use Ball (or Iceberg) lettuce. It is worthless.
- ^^ use Linda’s Basic Beans recipe, plant- based Chile, a bean loaf, or rinse and use beans from a can 😉. Dr John recommends you have at least ¾ cup of beans every day.
- ++ Please use Salad Dressings without added oil. Dr. John often ‘blenderizes’ raw Cashews as an ‘oil substitute’ in blended salad dressings (See Dressing recipes). There are many.
- **Adding raw chopped Cruciferous Vegies (Cabbage, Broccoli, Boc Choi, Arugula, etc.) and Allium Vegies (like raw Onion or Scallions) to salads is linked to lower cancer and heart disease risk.
Tip: Dr John uses a small amount of Plant Based salad dressing with no- added- oil. He often adds some Balsamic Vinegar, a touch of Brown Mustard, Salsa (no sugar) and/or hot sauce on the salad as well. (See Salad Dressing under Recipes).

- The above Salad is a combination of mixed Leafy Greens, Pinto Beans, Tomato, Cilantro Sprigs, Red Cabbage shavings, a palm full of broken Walnuts, and no-oil-added Salad Dressing (Oh, a squirt of Brown Mustard too).
- The Salad below contains Kale, Quinoa, Brussel Sprouts, Red Beans, Tomatoes, Peas, Red Cabbage, a tsp of Nutritional Yeast, and a no-oil-added Vinaigrette Dressing


This “Giant Salad” features Kale and Arugula greens; Instant Pot Kidney Beans, raw Onion, and Microwave Mixed Veggies (pictured in the bowl to the upper left. I used a small amount of vegan dressing and some balsamic vinegar in the bottle seen above as well.
