Adapted and changed from a recipe from Joel Fuhrman’s Book, Fast Food Genocide
Serves: 8
Ingredients
- 1 Cup unsweetened shredded Coconut (may use a 1 13.5oz can light Coconut Milk
- 2 Cups water (only use 1 cup water if you are using canned Coconut Milk above)
- 1 ½ medium Onions, sliced
- 3 cloves Garlic, minced [or 1 ½ tsp pre-minced garlic]
- 1 Hot Pepper (jalapeno, habanero, chipotle in adobo sauce, etc.)- add more if you are Dr John 😊 (alternatively use a favorite hot sauce instead)
- 1 Red Bell Pepper, seeded and thick diced
- 1 Carrot, diced
- 2 Sweet potatoes, cut into 1” chunks
- 1 Tbsp low sodium Soy Sauce, Tamari, or Braggs Aminos
- 2 full tsp Jerk Spice [see Spice Recipe folder] (or if you don’t have Jerk Spice add these instead: ½ tsp Cinnamon, ½ tsp Cumin, ½ tsp Allspice, and ½ tsp Ginger). Add a little more spice if you like!
- 1 tsp fresh Thyme (or 1/2 tsp dry Thyme)
- 1lb (460 gm) mixed Greens (your favorites like Kale, Collards, Turnip, Cabbage, and /or Beet Greens). 1lb is approx. 17 to 20 Cups of Greens.
- OPTIONAL: Make ½ cup per person of a cooked Whole Intact Grain (like farro, buckwheat, brown rice, quinoa, or barley). Serve this Caribbean masterpiece next to or on top of the grain- about 2 cups dry grain to 4 cups water for 6 people set at at 10 minutes in Instant Pot type pressure cooker. Dr John
- 2 to 3 Green Onions, chopped for a garnish when serving
Instructions:
Home Made Coconut Milk (if using):
Mix Water and Coconut in a high-performance blender to make “Coconut Milk”.
Cooking the Dish:
- Heat a large pot or wok over medium- high flame.
- Add all of the ingredients to the pot except the greens[the Coconut Milk, Onion, Garlic, Red Pepper, Carrot, Sweet Potato, Jerk Seasoning, Hot Peppers, Thyme, and Soy Sauce].
- Bring to a boil, lower heat and, let this simmer for about 10 minutes.
- Add the mixed Greens to the pot; and simmer (lid-on) all ingredients until the vegetable are tender and sweet potatoes have begun to break apart- approximately 20 minutes. [Note: I know this is a lot of greens; but they will quickly wilt down to 1/3 their original volume.]
Serving:
Serve in individual bowls or on plates as a side or over a whole intact grain like farro, buckwheat, brown rice, quinoa, or barley.
Sprinkle a little chopped green onion over each serving if you like.
Substitutions:
Sweet Potatoes: May use Butternut Squash instead of Sweet Potatoes.
