From: Adapted from a recipe idea found on CleanFoodDirtyGirl.com. It is very rich and creamy.
This is a fabulous salad dressing. Pour it over veggies, use it on roast butternut squash; or, drizzle it over tacos and burritos. You can use this sauce for anything and it will be delicious! LTF may be used anywhere mayonnaise is called for. Dr John
Ingredients
- 1/2 cup (75gm) Tahini
- 3 tablespoons (38ml) Lemon Juice (or 1 average sized lemon juiced)
- 2 Garlic Cloves chopped (1 tsp pre- minced garlic)
- 6 large Dates or fewer for less sweet. [Place quartered dates in small cup just cover with water. Let sit for 10 minutes or longer. Use the water in dressing.
(Alternatively use Agave Syrup, Maple Syrup. Molasses, or Honey.)
- 2 tsp low-sodium Soy Sauce or Tamari, or low salt Soy Sauce (Optional)
- 1/2 cup (280ml) water ( add more water to preferred consistency)
- ¼ tsp Paprika
- 3 drops Liquid smoke (Optional)
- ¼ tsp ground Chipotle Pepper or 1 tsp of hot sauce (Optional)
Instructions
- Place all the ingredients in your blender and blend until creamy and smooth, about one full minute. Check consistency and add water if needed.
- Use this as salad dressing; pour it over veggies; use it on roast butternut squash; or drizzle over tacos and burritos. TLF can be used like mayonnaise.
Recipe Notes
- This sauce will last for about 7 days in the fridge. It will also freezes 2 months.
- Dr John says to use this one sparingly for flavoring. This means you don’t have to search for the salad under all the dressing 😊.
- You may add a little Balsamic Vinegar, Brown Mustard, or Salsa to add additional flavor to your salads using less of the salad dressing. It stretches the dressing, and it will decreases the amount of oil used. Dr John
Note: This dressing is a little higher in oil (plant- based oil) so it has more calories. Use it sparingly. However, LTF perfect on whole grain bread for roasted vegie sandwiches; or use it as a dip for Artichoke leaves, or any other dish for which mayo might be called for.
Caution
People with established Heart Disease, Atherosclerosis, previous Stents, Bypass procedures, or who have Diabetes, are advised to be cautious about added fats, even plant-based oils. These include: Nuts, Tahini, and Avocado. Use dressings as flavorings only.
Use dressings and sauces sparingly. You may also add a little Balsamic Vinegar, Brown Mustard, or Salsa to your salad for additional flavor and enjoyment. These “stretch” the dressing; and you use less oil😊.
