A simple meal which might be utilized as either a fabulous Saturday breakfast, a scrumptious dinner, or a side dish for a crowd.
Ingredients
- 1 tsp cumin
- 1 tsp coriander
- 1 clove of garlic minced
- 1 pkg firm tofu
- 1 can cooked Black Beans (or Kidney Beans or Pinto)
- 2 Tbsp tomato paste
- 2 Tomatoes diced
- 2 Tbsp Hot Pepper Sauce
- 1 tsp Braggs Liquid Aminos or Low Salt Say Sauce (Optional)
- 1 ½ to 2 cups greens (Kale, with Spinach is good😊)
- ¼ cup water
Serves meal for 4 people, or a side dish for 6.
Preparation
- Crumble tofu into a pan with cumin, coriander and garlic. Cook over medium heat approximately 2 minutes.
- Add tomato paste, hot sauce, diced tomatoes, beans and greens.
- Add ¼ cup water and stir frequently until everything is heated through and the greens are wilted.
Serve as it is. You could have mixed vegetables, or a salad with this dish. A microwave heated, or pan toasted Whole Grain (Wheat or Corn) no- oil- added Tortilla would go well with this.
